Just moved from NY to NC. Not looking for track days as of now, I can't afford to get hurt while going through the police academy. Im in Matthews/Mint Hill area. Can anyone send me in the right direction for some nice mountain roads?

Deal's gap, tail of the Dragon. Mountain roads don't get any better than that...

Get on mapquest and do a route from where you are to Robbinsville, NC. Hwy 129
 
From the Charlotte area I wouldn't aim for the Dragon at first. A bucket list place to go of course, but there are tons of awesome roads much closer than that. I'd head towards Marion and go north from there. You have all the roads between Asheville and Boone to play with; 80, the 226/226A Diamondback loop around Little Switzerland, 181, 226, 261. 197 from Burnsville over to Erwin is fantastic. Draw a circle with 25 mile radius around say, Spruce Pine and enjoy!

Take the back roads from Matthews thru Monroe back to Pageland Sc to Lancaster. I grew up on those roads..
 
Raleigh/Clayton/Garner area here. I don't street ride much, but I've been known to take a quick ride every now and then.
