What would be the damping adjustment "Rule of Thumb" (number of clicks required) for both compression and rebound following the installation of lighter carbon fiber wheels?

That is a very personal thing, based on your weight and riding style. I had Ohlins front and rear built for me by Ducati Omaha, (your welcome for the plug Jarel), Once I made the switch I needed to go a couple of clicks in on both from where I had mine set. My bike is a 80/20 track/street bike so These setting could be way off for you.

I would ride it back to back for a few laps and stick a couple of clicks in to start.

BTW, I am running Rotobox wheels.
