Thanks. Interestingly when looking through the manual and in the riding mode descriptions it is only stating 195Hp as full power
 
The manual is one of the most useless pieces of garbage I've ever attempted to read. Reading Finnegans Wake thru a circus mirror is easier.

How do you see the "track screen"? How do those dynamic up / down buttons work (known as control switch 5 & 6)

Example:

Setting MENU
This menu allows enabling, disabling and setting some vehicle functions.

Even in Italian this has to be useless.

you have to hold the button (up or down) for about a second before it changes. I just followed the instructions and selected engine braking as the parameter I want to change on the fly. Have to say though, I feel very little difference between EBC 1 and EBC 3. There's no getting around the physics of a 1285cc twin I suppose!

Which button and which instructions? You can only pick one parameter to adjust on the fly?

Nevermind, I just figured it out. You have to go to the menu, pick the riding mode then select the display mode. You can't toggle it from the main screen.

I would find it very interesting if Ducati has changed the advertised 205hp to 195hp. Not that I care because the bike is awesome to me but I remember a lawsuit several years ago involving Mazda with the RX8 about HP/TQ or something like that.

I don't know, but would suggest, that it simply wasn't updated correctly from the 1199 manual. I guess these things happen with large documents sometimes. BTW, remember that it's 205 metric HP (aka PS) - it's not imperial Hp. Not a problem for RoW, but for Americans that are used to real horsepower it means 205 metric Hp = 202 imperial Hp.
