I would like to say hey thank you everyone for your guidance and push in the right direction:
We took our bikes to the dealership and luckily there was a really knowledgeable Ducati Tech there he set up the suspension on both our bikes with 36 mm front sag and 30 mm rear sag on her bike mine was 40 and 30 respectively - she didn't have to pay for her setup but i had to pay because it has been awhile now since i took delivery of my bike.
The major thing the techie did was shorten the springs and setup the sag as well as rebound and some other stuff which was beyond our understanding. The techie is into racing bikes and he set up his friends bike suspension for them which really came in handy when it came to setting up our suspensions
My wife is now able to almost flat foot on both sides (she's only 2 mm short on one side depending on which foot she uses to put down first).
We've just ordered heel lifter pad to put inside her shoes which will extend her reach and complete help her flat foot on both sides by an inch

Just realized we forgot to ask them to make our settings progressive instead of flat
