What is the settings +- in the main menu and why can't I access it? Thank you in advance for any help. I used search to no avail and this is my first Ducati.

They are the setting to increase or decrease whichever safety feature you have selected in the menu. There's a plus and minus switch on the left side clip-on, in the menu you can choose which, dtc, dwc, or ebc, to be able to + or - on the fly while riding. Pretty sure it only works in race mode, I never mess with it. Maybe you can't select it bc you're not in race?
Edit: Confirmed the menu option is grayed out if not in race mode.
