1st questions already.
Those that have fitted the Ducati race fairings, do all the plastic infill pieces need to be fitted back too?
Do I just swap the shift lever position to the bottom bolt to change to race shift on the standard pegs?
What front paddock stands are people using? I would prefer an under yoke stand.
The Ducati front fork stands look like they go in the bottom of the forks but on the V4s (21) there are no holes.

Kind of. The race fairings require all the black plastic infill bits put back as they seem to be for aerodynamics or airflow and not just aesthetics.
I am using my old under yoke stand although I couldn’t find a 28.5mm pin so it’s slightly unstable and I had to put a spacer to allow it to clear the bottom of the fairing. Still quite tight.
I switched to race shift by simply removing the footpeg and unscrewing the gear lever rod and re-attaching it to the bottom lug. No issues so far.
you could also use normal under fork stands with the flat pads and place them under the calliper mounts.

You might have received quicker answers on the V4 thread. I think it depends on the race fairings but I believe if they are straight race you do not use the side fill panels. The fairing stay has the air box pieces but some aftermarket stays have there own.
I use the Pitbull under fork stand and you can add the triple stand to it as well. If you are interested I can get the part numbeours.
 
I have a V2…but still…for stands I use cheapo warrior stands front and back. But also have an ABBA skylift for all my bikes for the ultimate stand
