Your problem sounds like there's too much pressure building in the tank leading to a sort of vapor lock condition, which will be very noticeable when warm. The EVAP canister is choking off the bike. Very common mod to remove them.

Have you tried leaving tank filler cap open? And see if it still happens, If it's a vacuum issue that should confirm it

When the bike has the problem, take off the gas cap and see if there is a release of built up gas vapor.

Just have it unclipped and have tank half full, just to allow it to vent, should be fine just to test

I wouldn’t be surprised if the breather and drain pipe are crossed…

it's quite possible, since we have very bad Ducati servicethey fix one problem and break another

brother, I did this, opened the gas cap and drove without it, the problem remains the same, maybe it’s in the upmap firmware?

Doubtful. It is a pretty straight forward process. If there's no error or check engine lights, I wouldn't expect this to be the problem. During the flash process, the factory tune is saved to the T-800. You could restore it and see, but I'm not keen on this idea.

If the problem began after the removal of the tank, and tank venting doesn't seem to be the problem, the only thing left is to take the tank off and inspect. Perhaps the fuel line or the fittings are damaged. If you didn't want to remove the tank, you could inspect the fuel lines by removing the right upper fairing. There is a rubber hose which comes from the tank and feeds into a T fitting that has two quick detach fittings which go to the upper and lower injectors. Maybe they are not fully seated.

That wouldn't matter since it would be effectively removing the EVAP canister and venting the tank through the overflow line.
