Update, the story continues. On the ride home, following my first service I exited the interstate and the bike stalled again in 1st gear following some studdering. This time it was in street mode.

I do not overfill / I have not overfilled to the brim. I just know that all the ducatis I have seen/ had seem to have the same symptom and removing the charcoal canister takes care of it.

Only prior to my first event ( I wasn't then educated on this being problematic) I have taken great care to avoid it now.

The canister was inspected and found normal after it stalled on the dealer test ride. Only a strong smell of vapors noted.
As I mentioned above. I don’t think it has anything to do with it being full. Rather just it being there and restriction the ability of gas vapors to exit freely causes issues under the right conditions
Smith you from a high humidity high temp location (or dew point)? Looks like JLAD is from Louisiana. I haven’t had any issues w hot start or charcoal canister but I’m in temperate climate w low dew point
You fixed it?
I had this problem on my 1199, it was a short in the clutch cables, that was even messing with the QS, the computer was constantly thinking that the clutch was pressed. When I came to a stop with clutch in, when hot, the idle will drop to the point of shutting off the engine in most of the cases. After correcting the cable short, the idle automatically increases when stopping in the same way.
So checking the clutch lever wires could help.
