What is this bolt?

The one in the middle of the picture with the green mark on it. I've looked at the parts diagram and can't figure out what it does.

That is an factory adjusted pressure valve. There is a spring that maintains pressure on a small ball bearing that controls fluid pressure. It is held in place by the stud and fixed with the nut. Rotating the stud clockwise or counter-clockwise changes the seat pressure of the ball. Forget you ever saw this unless of course you did see it and played with it then we would need to expand the conversation.

Okay, so let's say I did play with it...just a little bit. Then what? And you say "Fluid Pressure". Fuel, oil???

Ha, as I suspected LOL. It’s not a big deal. See if you can go by a visual reference. The exposed part of the stud should have some discoloring due to normal corrosion. See if you can line that back up. If not maybe someone here can measure there’s. I’m not near a bike at the moment.
 
Thanks. The outer bolt was rusty so I was going to replace it. As I tried to back it off the adjusting bolt inside was unscrewing with it. At that point I realized it might do something I did not want it to do, so I tried to turn it back in more or less the same amount, but I had trouble seeing how much I had unscrewed or screwed it back in.

Wbat does it actually do? I can’t make heads or tails of it.

Not exactly sure except for the obvious which is shown in the pics I included above which is to divert/bleed oil from its original route. I’d have to look at it more closely and trace the route. It could be an over pressure relief valve or it could be a pressure regulated diverter based on some requirement somewhere.
 
I just about played with mine. The Rust is killing me. So dumb. It’s that and the one on the shifter right next to it are the only things on the whole bike that rust. Why...... makes 0 sense. Following to replace mine.
