Buy it new my friend! you'll be better off in the long run.
Imagine the fuckery that bike has gone through in those 1000kms. I know theres a couple different takes on the break in of a new motor and some say hard break in is the way to go but im pretty sure it doesnt call for redline after redline . Unless you're getting a fire sale i would pass too.
Why wouldn't it be worth the plane ticket over on an investment like this? Or consider renting a truck or van with tie-downs in case you like it? Is it 16 or 17? You'd get a better deal on a 16. Don't pay more than 21 for it. Shop around online for what other dealers are asking for their 1299S demos; there's quite a few out there. For peace of mind, have the engine checked and do a compression check.
Buy a used base model...thats my advice. Make sure it's still under factory warranty and just extend the warranty for another 4 years for around $1500. You'll be safe as far as the warranty is concerned and you wont get slaughtered when you're done with it. Base model is more than enough bike.
I don't mess with Demos because I know how I would be with a demo bike. I can't imagine the dealer is putting a lot of TLC in them either.

Every engine is taken to the redline at the manufacturer to look for any faults.
Still from op description I would walk away.
Don't pay more than 21k for New or Demo? I had a dealer contact me today. I had reached out a week ago, guess he was getting through his inbox. My goal is 21k OTD, for me that is the 1299 and dealer fees. It's out of state so I pay the TT&L at home.
Demo. You were talking about the demo although most here were getting you to go new. Everyone's assuming the worst with the demo. Too often traffic or controlled runs will keep the abuse down if any. I don't abuse bike on demo runs. Conditions on the street don't allow for it nor do I abuse others property.
