All I did was change to LSL grippier foot pegs as the std pegs were like ice.
No need for extra rear sets IMHO

if it's a track bike only , this is very sound advice on the carillo's...

good choice on the suspension... did you keep same spring at the rear (95?)
any idea on oil level - airchamber?
ask Dan to make a spec sheet... ( oil, shims , spring rate ) you'll need it when you start getting faster...

A couple of other threads on here about the OZ Checa replica Aluminum wheels at the moment.
Check these first as the Aluminum OZ's are supposedly heavier than stock S wheels? Same wheels but in magnesium........ pricey, but oooooooo! And the weight savings are huge, especially as they are the weights with the adaptor kits etc.
