My 1199 spends 99% of it's time on the daily commute, and most of that is in heavy London traffic so i'm finding covering the foot-brake really tough due to the general riding position.

I was looking to not change the height of the pegs as such as the general height works for me, but rather to drop/rotate the footbrake lever down (maybe 2") so it is more in line with the natural riding position of the bike.

I've not got any experience with rearsets, but would I have to get adjustable rear-sets to achieve this, or has anyone heard of an adjustable rear brake pedal instead?

The rear brake pedal is adjustable for height, but if you don't know how to do it I would recommend just having your local shop do it for you. If you do it wrong you can end up causing a permanent drag on the rear brake, overheating the rear disc, melting the pads, etc.

The only adjustment I see is the free play on the pedal to the master cylinder.
buy new rear sets!

No, there's a locknut on the plunger rod to adjust the length of that, and then you adjust the length on the brake switch stop to compensate for it. The locknut on the plunger is underneath the return spring which is why it's hard to see. Here's one off the bike with the spring removed so you can clearly see the two adjustment points:

Here you go!

Modify rear brake pedal position as follows.
Loosen check nut (4).
Turn pedal travel adjusting screw (5) until pedal is in the desired position.
Tighten check nut (4).
Operate the pedal by hand to check that there is a freeplay of about 1.5÷2 mm before the brake begins to bite.
