I usually run the DWC on 2, but find the the front does come up in second gear when snapping the throttle open fast. When it does. I short shift into 3rd gear.

Does the wheelie control only let the wheel come up so high, or will the bike come all the way up if I stay in it?

No it only controls the speed at which the wheel lifts snapping the throttle will ultimately see the wheel go skyward rapidly especially with Dynamic power delivery selected.
If your going to snap the throttle instead of a quick roll on then go to 3-4 on DWC.
I have Dynamic & DWC - 2 and rolling the throttle to the stops has the wheel just skimming the road or it will carry it say 8-10" off the tar a great feeling.

My good riding buddy passed some of his mates at on a V4 "S" at 190Klm/Hr carrying the wheel just off the deck in 3rd gear greatly impressed his mates.
He was a state 350 road race champion and still has his TZ350 he drag races his 750cc Ducati pushing 250BHP he is a great guy & Ducati dealer here in Bunbury West Au.
