Does anyone have an idea where to source a Banjo Bolt that would facilitate the use of an inline clutch sensor switch, and still be able to use a banjo bolt longer than stock length but shorter than OEM length for a double banjo bolt?

It appears Proti has one close to this requirement: Proti M10 Universal Double Line Banjo Bolt M10L29-OT01 - 29mm long, 1.0 Pitch

Or should I use a different switch assembly? Or remove the switch entirely?

I used this one.

I just soldered and shrink wrapped the factory connector under the black plastic sheathing for the wires. Looks factory.

Do not leave the switch unplugged, the bike will think the clutch is pulled in and use a different map and lower the rev limit. Atleast that's what it did on my 1199. Since it was a track bike, I just left the switch to the side.
