You can, but you will get a CEL on your dash. The akro map removes the function of the evap canister. So no CEL light.

Removing the Evap canister does not throw any codes. Removing the purge valve completely can throw a code, but most just block it off with a bolt or plug. Removal of the exhaust servo valve also throws a code, but that's relatively unrelated.

Theres no sensor or anything for the canister. No way for the bike to know if it has been removed.

My bad! I was thinking the valve and canister was one piece. Then I took a look on my akrapovic install manual…oops.
 
Is it fine to remove the evap canister on stock exhausts?

Yes.

All you need to do is use a Y-fitting to connect the vent to the overflow line. The vent is the the front and the overflow is the rear.

If you leave the EVAP canister in place, the purge valve stays plugged in and you won't get an error code.
