And like I said, from experience I haven't had an issue with the coolant system after tank removal, but everyone has their opinions. Has there been a real instance of a blown head gasket from a 2.0 cap? I doubt it

It's not the cap, it's the amount of heat and pressure that the system will see if something goes wrong. There's a reason they put a 1.6 cap on. They wanted it to be puking water on your leg before the motor checks out (apparently they were not always successful at this). I went the other way to a 1.1. It's never opened either. I watched the initial waterpump failures when the motors were putting water into the oil (this disappeared after the first revision now they just leak to the outside). Totally pressure related. Once the pumps start to leak only fix is new pump (you can change the seal maybe if you can find one). When the system pressure exceeds the ability of the seal to retain it, bye, bye. As an experiment pull the connectors to the fans, and let the motor idle until either the cap opens or the head gasket goes. If you're lucky the pump will check out first. Or maybe a hose will blow off. Regardless the heads will be useless as you've just annealed them. A little research into current aluminum casting heat treatments versus what Ducati already allows in engine temps might be enlightening.
