Do you think its an electronics problem, clutch master/slave problem, or something else? I'm using the wet clutch and every time I've tried to launch it with DPL its been terrible.

Do you have a dealer nearby? It could be the pressure on the clutch actuation rod is wrong.
On the left side of the bike, just infront of the front sprocket, there's an unusual bolt. It doesn't have a head, but a torx bit will fit inside it. It has a locknut. This bolt, adjusts the pressure from the clutch lever, to a shaft that activates the clutch plates. There is an expensive Ducati tool that measures the pressure, and then you adjust the bolt to achieve the desired pressure.
Or, you can play with it, 1/4 turn at a time. Try backing it out.
It helped mine.

I should have a general idea about the sitta fitment tomorrow. Probably no different than on an R.

I’ll post pics and I already have an idea what to modify if needed
 
I’m hoping that extent of the modification if needed doesn’t surpass machining the front face of the flange and does not involve any chain alignment issues.

I don’t have a laser chain alignment tool but I’ll do my best with a straight edge.
 
All it would take is to machine it down to hold the washer and that is just if you will not ride it with out safety pin - which at 220nm that nut isn't coming off. I had it on and everything was straight.
 
My Hero 11 usually cuts our after a few minutes..So annoying, sent it back and new oneness exactly the same.
My Chinese camera that cost 20% of the gopro price is better.

I can confirm… front face of the carrier will need to be machined approximately 3-4mm to accommodate the axle nut for the safety clip to fit.

Chain alignment looks fine as is.

What cush drive pins did you use? Stock or does the flange come with some?

I also noticed that there are 2 Sitta flanges/hub carriers for this system:

The 206 has the recess for the nut and must use stock cush drive pins
